Servings2 - 4
Ingredients
4QL D'Fresh eggs
250 g sausage meat
1 sprig fresh thyme, chopped
1 tbsp parsley, finely chopped
1 tbsp chive, finely chopped
100 g plain flour, lightly seasoned with salt and ground black pepper
1QL D'Fresh egg, beaten
150 g panko breadcrumbs
1 loil (for frying)
Salt and crushed black pepper, to taste
Method
- Soak QL D'Fresh eggs in iced cold water for about 15minutes.
- Boil the eggs in boiling water for 8mins and then place them back into a bowl of iced water. Remove shells from the eggs.
- Remove sausage meat from casing, then add in freshly chopped herbs and season with salt and pepper, mixing well.
- Divide the meat mixture into four portions, flatten the meat and wrap each egg with a portion of the meat mixture. Chill in the fridge for 15 minutes.
- Dip each sausage meat-coated egg into the flour, shaking off any excess, then into the beaten egg, and finally, coat with the breadcrumbs.
- Heat the oil in a deep heavy-bottomed pan. Carefully place each Scotch egg into the hot oil and deep-fry for 6 - 8 minutes, until golden and crisp and the sausage meat is completely cooked.
