Ingredients
Fried Rice
1½ tbsp cooking oil
1 medium onion, chopped
50 g chicken breast, diced finely
40 g carrot, diced finely
40 g green capsicum, diced finely
10 g butter
260 g cooked Japanese rice
1 tbsp soy sauce
½ tbsp tomato ketchup
1 tbsp demi-glace
Black pepper
Garlic powder
Omelette
4 QL Omega Eggs
1/16 tsp salt (slightly heaped)
½ tbsp oil
Sauce
1 tbsp soy sauce
1 tbsp tomato ketchup
1 tbsp demi-glace
1 tsp sugar
2 tbsp water
Topping
A handful of shredded nori (dried seaweed)
Method
- To make the sauce, boil all the ingredients in a saucepan. Set aside and keep warm.
- To make the fried rice, heat cooking oil in a frying pan and sauté onion until fragrant.
- Add chicken, carrots and capsicum. Sauté until cooked.
- Next, add butter, then cooked rice, and fry until rice is hot and coated with oil. Add black pepper and fry for one minute.
- Add the soy sauce, tomato ketchup, demi-glace and garlic powder. Stir well to distribute sauces through the rice.
- Lightly press sufficient fried rice into an oval or round bowl and overturn the rice onto a plate.
- To make the omelette, whisk QL Omega Eggs and salt in a medium bowl using a pair of wooden chopsticks.
- Heat oil in a small non-stick frying pan and pour in QL Omega Eggs. Using chopsticks, whisk QL Omega Eggs in the pan until half-cooked. Once the base of the omelette is set, slide it onto the rice.
- Garnish with nori and serve.
