These pretty cookies are a delight to look at and wonderful to eat. Make plenty to serve to guests as they are sure to stand out on the cookie tray.

Ingredients
230 g butter
50 g icing sugar
1QL D'Fresh egg
30 g custard powder
30 g cornflour
220 g plain flour
2 g baking powder
½ tsp vanilla essence
Few drops of red coloring
Buttercream Filling
250 g butter
500 g icing sugar
Method
- Mix together butter and icing sugar for approximately 45 seconds.
- Mix in the remaining ingredients and let the dough rest for 5 minutes.
- Place the dough into a piping bag with star nozzle and pipe a rose shape onto a lined baking tray.
- Bake in a preheated oven at 160°C for 15 – 20 minutes.
- Cool cookies on a cooling rack.
- Sandwich the cookies with a layer of buttercream in the middle.
- To make the buttercream filling, cream butter lightly then add in half of the icing sugar. Slowly add in more icing sugar until the correct consistency is achieved.
