Choosing Quality Eggs for Nourishment
When purchasing eggs, always check to ensure:

- the expiry date is still valid for use

Things to Watch Out When Using Eggs
Keep eggs refrigerated until required for use within the expiry date. This helps to keep the eggs fresher for longer.
When storing the eggs in the fridge, use the egg trays or specific egg storage area to keep the eggs with the pointed ends facing downwards. This helps to maintain the stability of the air cell at the rounder end of the egg and maintain the best quality of the eggs.
Store eggs away from other odour containing foods such as onions and fish which the eggs can absorb the eggshell.
Storing Eggs to Maintain Quality
Avoid using the eggs if the inside of the egg appears to be off-colour such as pink, green, or have an iridescent egg white. This is an indication of spoilage caused by Pseudomonas bacteria which produces greenish, fluorescent pigments.
Avoid using eggs if the inside appears to have black or green spots which indicate bacterial or fungal contamination.
